Block Island is famous for the swordfish caught off its coast. I have traveled extensively for my business and have seen ‘Block Island Swordfish’ called out on menus in places like Canada, France, and even Hong Kong. It always amazes me that this little island, that so many people in the U.S. don’t even know exists, is called out by name on menus in foreign countries all over the world. I headed to Dick’s Fish the other day and got some beautiful swordfish steaks and whipped up one of my family’s favorite summer dishes – blackened swordfish. Not only crazy delicious, but it is super easy to make with only four ingredients. - 2 ½ to 3 pounds fresh swordfish steaks, about 1 to 1 ½-inch thick - 2 tablespoons Dish off the Block Ragin’ Cajun Spice Blend - 2 tablespoons Italian breadcrumbs - 3 tablespoons olive oil
Remove swordfish fillets from the refrigerator and let them come to room temperature, about 20 to 30 minutes before cooking. Preheat oven to 375 degrees. Combine the Cajun spice blend and breadcrumbs in a small bowl. Rub this mixture all over the swordfish steaks on both sides to create a solid coating. Heat the olive oil over high heat in a cast iron skillet until almost smoking. Add the swordfish steaks and sear on each side for about 2 to 3 minutes per side until dark brown and crispy. Place the skillet in the oven and continue to cook until the fish is just cooked through, about 5 to 8 minutes, depending on the thickness of the steaks. The fish is done when a fork inserted in the center goes in and out easily. Do not overcook.
